Crème Brûlée is a classic French dessert that literally translates to ‘burnt cream’. It is enjoyed by many around the world. Traditionally, it is made with cream, eggs, and sugar, making it not vegan-friendly. However, this recipe allows vegans to enjoy this delicious dessert with simple and easy alternatives!

This crème brûlée premix by Double Happiness (a natural baby food provider) is created with no artificial colouring, no preservatives, no trans fat and no gelatin. The components to make this crème brûlée taste as good as the real deal, and have been researched and developed with carob bean gum (extracted from the seeds of the carob tree and contains antioxidants + low amounts of sugar) and red seaweed.

I have used this premix to make this dessert in literally 5 minutes. It was so simple. Most importantly, it tasted amazing.

Ingredients
  

Instructions
 

  • Add all the ingredients to the saucepan. Switch on the gas to high heat.
  • Whisk the ingredients together until it reaches a bubbling boil (2-3 minutes)
  • Pour it into the ramekins
  • Refrigerate for 3 hours to set
  • Sprinkle some brown sugar on the top of the ramekins
  • Using a kitchen blow torch, caramalise the brown sugar until it is golden and bubbly
  • Serve as is or with fresh berries on top

What Are Egg Waffles?

Egg waffles are also known as  雞蛋仔 (literally translated to ‘little eggs’). This popular street food snack originated in Hong Kong. They are made using a special mold that creates a grid-like pattern of small, puffy spheres, which are crispy on the outside by soft on the inside.

The batter is typically made with flour, eggs and sugar and flavored with various kinds of sweet or savoury condiments like chocolate, green tea or peanut butter.

The Technique For Egg Waffles

Making the perfect egg waffles requires a lot of practice. It is harder than it looks. Since these waffles are dome shaped and hollow on the inside, the perfect speed to spread the batter on the bottom and top of the mold is vital.

Before you start, the waffle maker needs to be buttered well. Skipping this step will make your batter stick to the mold and pull apart.

  • You need to pour enough batter onto the center of the mold to ensure all crevasses are covered
  • Twisting the mold with your wrist for a few seconds helps push the batter to the edges of the mold
  • Switching on the heat before you pour the batter rather than after you butter the mold is a handy trick

Another handy tip is to also ensure your batter is smooth and runny, and not thick. I have used whole wheat flour for this recipe, so it does end up being a little more dense than using all-purpose flour. Nonetheless, you can add a tbsp of water bit by bit, to reach a smoother consistency.

  • 1 Egg Waffle Maker
  • 1 Mixing Bowl

Ingredients
  

  • 2 cups whole wheat flour
  • 1/8 tsp salt
  • 1 tbsp brown sugar
  • 1/2 banana
  • 1 egg
  • 2 tbsps Greek yoghurt
  • 1.5 cups water room temperature

Instructions
 

  • Mix all the dry ingredients together
  • Mash the banana with the wet ingredients
  • Combine the wet ingredients with the dry ingredients. and whisk thoroughly.
  • Brush the waffle maker with a generous amount of butter over no heat
  • Switch on the gas to high heat, then pour about 1/2 cup of the egg waffle batter on the center of the waffle maker
  • Quickly twist the waffle maker with your wrist, ensure the batter has covered all edges of the waffle maker
  • Close the waffle maker and lock the latch
  • Turn the waffle maker around and repeat the twist with your wrist
  • Wait for about 5 minutes before you gently unlock the latch
  • Switch off the heat and let it cool before you peel the egg waffle off. This will prevent it from breaking.
