What is Gajar Ka Halwa? (Gah-jer K-a Hull-wa) It’s an Indian-style delicious candied carrot dessert. Halva has travelled through Persian, Indian, Greek, Jewish, Turkish and other Middle Eastern communities for many years and there are several variations of this dessert. I talk more about the origins of this gorgeous traditional dessert here in my original Gajar Ka Halwa recipe.
What Are Gajar Ka Halwa Cupcakes?
After making the pudding version of the dessert, I had some left over and thought it would be such an upgrade to the traditional carrot cake recipe to make this version. I was so right.
To make these decadent cupcakes, I used left-over gajar ka halwa (I’m also surprised there was some left over!) and combined it with 6 other ingredients to make it into an eggless cupcake. I topped this off with some gorgeous fresh pistachio cream cheese frosting and…it was just scrumptious.

How do you make the Gajar Ka Halwa?
To make the most delicious Gajar Ka Halwa, you need use my easy recipe. The secret to making the most pudding-like halwa, is to boil the full-fat milk beforehand, until it has a thick layer of malai (clotted cream) on the surface. Then you have to slow cook the rest of the ingredients for about an hour. It is worth the investment, trust me.


This Is An Eggless Recipe And Vegan Friendly!
Yes! this recipe has no egg in it. However, it’s not dairy-free. To make this vegan, you can certainly replace the full-fat milk with soy-milk. I have not tried this, but from how often I use soy-milk, I am very sure it will turn out similar in taste and texture.

Gajar Ka Halwa Cupcakes with Pistachio Cream Cheese Frosting

Gajar Ka Halwa Cupcake
- 360 grams leftover dessert Gajar Ka Halwa
- 1 cup all-purpose flour
- 1 cup almond flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tbsp sugar optional
- 75 ml milk
- 1/2 tsp cardamom powder optional
Pistachio Cream Cheese Frosting
- 250 grams cream cheese
- 2 tbsp pistachio butter
- 1/2 tsp almond extract
- 3-4 tbsp icing sugar
Instructions
Gajar Ka Halwa Cupcake
- Combine altogether using an electric mixer
- Bake for 20 minutes at 200 degrees Celsius
Pistachio Cream Cheese Frosting
- Mix with an electric mixer until smooth
- Pipe on the cupcakes when cool
- Garnish with chopped pistachios and strands of saffron
