White Garlic Truffle Sauce in 10 Minutes

A delicious, easy white sauce with garlic and truffle

Equipment

  • 1 Food Processor
  • 1 Cast Iron Sauteuse
  • 1 Chopping Board
  • 1 Sharp knife
  • 1 wooden spatula

Ingredients

  • 1/3 medium sized onion chopped
  • 3 tsp garlic minced
  • 2 tbsps black truffle sauce Giuliano Tartufi Salsa Tartufata is the best!
  • 1/2 cup cooking cream
  • 3/4 tbsp purpose flour
  • 2 tbsps avocado oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dried sage
  • 1 tsp dried chilli flakes
  • 1 cup pasta water
  • 2 cups boiled pasta of your choice!

Instructions

  • Add all the ingredients to a food processor and blend until smooth
  • Add the mixture to a pre-heated Meyer cast-iron sauteuse and sauté until fragrant.
  • Add the salt, pepper, sage, dried chilli flakes and pasta water. Stir continuously over high heat until the mixture starts bubbling.
  • Lower the heat, add the cooking cream, and gently whisk in the flour. This step is optional if you like your pasta sauce less thick. If you'd like a beautiful truffle roux, add the flour.
  • Once the sauce has turned thicker, add in your pasta and mix through until the pasta is fully covered in sauce.
  • Serve with grated parmesan and enjoy!
