A delicious, easy white sauce with garlic and truffle

Ingredients
1/3medium sized onionchopped
3tspgarlicminced
2tbspsblack truffle sauceGiuliano Tartufi Salsa Tartufata is the best!
1/2cupcooking cream
3/4tbsppurpose flour
2tbspsavocado oil
1/2tspsalt
1/4tsppepper
1tspdried sage
1tspdried chilli flakes
1cuppasta water
2cupsboiled pasta of your choice!
Instructions
Add all the ingredients to a food processor and blend until smooth
Add the mixture to a pre-heated Meyer cast-iron sauteuse and sauté until fragrant.
Add the salt, pepper, sage, dried chilli flakes and pasta water. Stir continuously over high heat until the mixture starts bubbling.
Lower the heat, add the cooking cream, and gently whisk in the flour. This step is optional if you like your pasta sauce less thick. If you'd like a beautiful truffle roux, add the flour.
Once the sauce has turned thicker, add in your pasta and mix through until the pasta is fully covered in sauce.
