Pomegranate Guacamole

Guacamole is a staple dip whenever anyone comes over for a meal. It’s healthy, easy and a great start to a good course of food. 

I love to make this whenever I have only 10 minutes to impress a house full of guests. I have added pomegranate and pistachios as extra toppings to enhance the avo flavours. Serves 4 | 10 minutes | 

Ingredients:

  • 2 medium ripe avocados
  • 1/3 cup diced red onion
  • 1/4 cup chopped cilantro
  • 2 tbsps of freshly squeezed lime juice
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 small diced tomato
  • 1/2 cup pomegranate seeds

Method:

  1. Scoop the avocado in a hand blender, along with the red onion, cilantro, lime juice, salt, pepper and tomato
  2. Blend it all together
  3. Sprinkle the pomegranate
  4. Serve with Za’atar Lavash
